Honey is a sweet, viscous food substance made by honey bees and some related insects. Bees produce honey from the sugary secretions of plants (floral nectar) or from secretions of other insects (such as honeydew), by regurgitation, enzymatic activity, and water evaporation. Bees store honey in wax structures called honeycombs. The variety of honey produced by honey bees is the best-known, due to its worldwide commercial production and human consumption. Honey is collected from wild bee colonies, or from hives of domesticated bees, a practice known as beekeeping or apiculture.

Over its history as a food, the main uses of honey are in cooking, baking, desserts, as a spread on bread, as an addition to various beverages such as tea, and as a sweetener in some commercial beverages.

In Jewish tradition, honey is a symbol for the new year, Rosh Hashanah. At the traditional meal for that holiday, apple slices are dipped in honey and eaten to bring a sweet new year.

The Hebrew Bible contains many references to honey. In the Book of Judges, Samson found a swarm of bees and honey in the carcass of a lion (14:8). In the Books of Samuel, Jonathan is forced into a confrontation with his father King Saul after eating honey in violation of a rash oath Saul has made. Proverbs 16:24 says "Pleasant words are as a honeycomb, Sweet to the soul, and health to the bones."

The Christian
New Testament (Matthew 3:4) says that John the Baptist lived for a long of time in the wilderness on a diet of locusts and honey.

TIP: You can mix honey and raw Tehini (ratio of 1:1 or according to your taste) and create a very delicious Halva spread, try that !
